Recipe: Pumpkin Cherry Trail Mix

Fall is in the air & sweet treats are everywhere! Try this great snack for all your run-around needs or just an afternoon pick-me-up instead of those pumpkin sweets.

Pumpkin Cherry Trail Mix

Prep time: 20 minutes. Makes 8 servings.

Ingredients

  • 2/3 cup raw shelled pumpkin seeds

  • 1/3 cup raw slivered or coarsely chopped almonds

  • 1/4 cup raw shelled sunflower seeds

  • 2 Tablespoons maple syrup

  • Coarse salt

  • 1/3 cup dried cherries or cranberries

Directions

  1. Preheat oven to 300°F. Line a large baking sheet with parchment paper.

  2. In a medium bowl combine the pumpkin seeds, almonds, sunflower seeds and maple syrup. Toss until all the nuts are evenly coated with syrup. Spread the mixture out in a single layer on the parchment. Sprinkle with salt. Bake for about 20 minutes, stirring occasionally, until nuts are golden brown.

  3. Remove pan from oven and set aside to cool.

  4. Mix in the dried cherries or cranberries.

  5. Store in an airtight container at room temperature.
