Recipe: Winter Fruit Compote

This delicious recipe uses an abundance of winter fruits, seasonal flavors, and even some protein-packed ricotta so you can enjoy both great nutrition and a taste of the season.

Winter Fruit Compote

Prep time: 20 minutes. Makes 6 servings.


  • 2 cups chopped rhubarb

  • 1/2 cup sugar

  • 1 teaspoon orange zest

  • 1/2 cup fresh orange juice

  • 1 cinnamon stick

  • 8-ounce container part-skim ricotta cheese

  • 1 tablespoon pure maple syrup

  • 1/2 teaspoon vanilla extract

  • 1 apple, peeled and cubed

  • 1 pear, peeled and cubed


  1. Add the rhubarb, sugar, orange zest, orange juice and cinnamon stick to a medium saucepan and bring to a boil over medium-high heat.

  2. In the meantime, prepare the topping. Place ricotta cheese, maple syrup and vanilla in a food processor or blender and puree until smooth. Transfer to a bowl and let chill in the refrigerator.

  3. When the pot comes to a boil, reduce heat and let simmer for 3 minutes, stirring gently. Add apples to the pan and cook for 2 minutes. Add pears and cook for about 1 minute more, until the fruit is tender.

  4. Remove pan from heat and set aside to cool. Remove cinnamon stick.

  5. Enjoy chilled or at room temperature with a scoop of the whipped topping on top.
