Recipe: Slow Cooker Turkey Picadillo

Comfort food can still be healthy! This dish is filled with vegetables and protein, but hits the spot on a cold winter night.

Winter is hitting hard this year! If you feel yourself craving some hearty comfort food, try this healthy, protein-packed option!


Slow Cooker Turkey Picadillo

Prep time: 20 minutes of prep, 4-6 hours in slow cooker. Makes 4 servings.

Ingredients

  • 1/2 tablespoon olive oil

  • 1 pound 93% lean ground turkey

  • 2 ounces spicy cooked chicken sausage, diced

  • 1/2 tablespoon chili powder

  • 1 teaspoon cumin seeds, crushed

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon ground cinnamon

  • 1/4 cup water

  • 1 tablespoon tomato paste

  • 1 tablespoon red wine vinegar

  • 1 medium onion, chopped

  • 1 cup chopped, seeded Cubanelle or Anaheim peppers

  • 1/2 cup frozen corn kernels, thawed

  • 1/4 cup pitted green olives, sliced

  • 2.5 cloves garlic, minced

  • 14.5-ounce can diced tomatoes

  • 1/8 teaspoon salt, or to taste

  • Freshly ground pepper to taste


Directions

  1. Heat olive oil in a large skillet at medium-high heat.

  2. Add ground turkey and sausage to the skillet. Stir and chop the mixture for finely ground meat. Cook for about 6 minutes.

  3. Combine chili powder, cumin, oregano, and cinnamon with the meat. Continue cooking for 1-2 minutes over medium-high heat. Stir in water, tomato paste, and vinegar, until incorporated.

  4. Add meat mixture to a 5-6-quart slow cooker. Stir in onion, peppers, corn, olives, garlic, and entire can diced tomatoes with juice.

  5. Cover and set pot to cook for 4 hours on high or 6 hours on low.

  6. Add salt and pepper to taste before serving.

You can serve as is, or over brown rice, with whole grain corn tortillas and avocado, or with your favorite vegetables.
